Bombay Fried Rice Recipe Bombay Fried Rice Recipe
While coconut chutney on its own is a fantastic addition to any simple baked potato or basmati rice, it can also be uniquely enhanced in a variety of flavorful ways:
Ingredients
- 1 cup of dry Basmati Rice
- ¼ cup raw cubed potato
- ¼ cup chopped onion
- ¼ cup shelled peas
- ½ cup any other diced vegetables (optional)
- ½ teaspoon chopped green hot peppers
- 2 tbsp chopped fresh cilantro
- 2 tbsp cooking oil
- ½ teaspoon salt
- ½ teaspoon dry turmeric powder
- ½ teaspoon grated fresh ginger
- ¼ teaspoon red chili powder
- ½ teaspoon garam masala
- 1 teaspoon cumin
Process
- Rinse rice three times lightly with cold water
- Add 2 cups of cold water to rinsed rice and put aside for a minimum of 15 minutes or for more time.
- In a skillet add cooking oil in heated pan (medium high)
- Add onions and cumin to it
- Lightly brown the onions
- Add chopped green hot pepper
- Add peas, potatoes, vegetables, and ginger
- Stir quickly for 1 minute
- Add soaked rice including the water (2 cups)
- Add salt, turmeric, red chili powder, garam masala
- Bring it to boil
- Lower the heat to lowest setting
- Cover it but leave it open on the corner so it does not overflow
- Periodically check using a fork
- Wait about 15 minutes for pilaf to be done
- Transfer the pilaf into a serving dish
- Garnish the pilaf with chopped fresh cilantro
- Enjoy!
